Baja Chipotle Scallop & Shrimp Skewers with Mango Salsa

YIELD: 4 portions

Ingredients: Imperial Metric
Saucemaker Baja Chipotle Sauce 1 cup 250 mL
Juice of a lime 1 lime 1 lime
Fresh red chili, seeded & finely chopped 1 1
Raw bay scallops, in round 10 10
Large raw shrimp, cleaned & de-veined 10 10
Bamboo skewers, soaked in water for 30 minutes 4 4
Vegetable oil 1 Tbsp 15 mL
Mango Salsa:
Mango, peeled and diced 1 1
Saucemaker Baja Chipotle Sauce 2 Tbsp 30 mL
Red onion, small, finely diced 2 onions 2 onions
Fresh cilantro, chopped 3Tbsp 45mL
Zest and juice of a lime


  1. Combine Saucemaker Baja Chipotle Sauce, lime juice and chopped chilies.
  2. Place scallops and shrimp in a non-reactive dish, add sauce mixture and coat thoroughly.
  3. Cover dish and refrigerate for 30 minutes, thread scallops and shrimp together, nesting the scallop inside the tail of the shrimp.
  4. Grill the skewers in a prepared (oiled) grill for 4-6 minutes.

Mango Salsa:

  1. Mix all ingredients for the salad together in a bowl and refrigerate until you are ready to eat.
