Caliente Mexican Burger

"Caliente" means hot, and this beautiful burger delivers just the right amount of delicious heat. Lean beef is seasoned with Peppercorn Brandy Sauce, featuring wood-aged brandy and a colourful blend of peppercorns. Then it's grilled and crowned with authentic Pepita Mole Sauce, Pepper-Jack cheese, fresh tomato and avocado. A bold, juicy adventure.


Ingredients: Imperial Metric
Ground beef, lean 3 lbs 1.5 kg
Black peppercorns, ground 1 Tbsp 15 ml
Olive oil, extra virgin cup 50 ml
Garlic, minced 4 cloves 4 cloves
Saucemaker Peppercorn Brandy Sauce cup 50 ml
Shallots, minced 1 med. shallot 1 med. shallot
Ground rosemary 1 tsp 5 ml
Salt 1 tsp 5 ml
Spicy Pepper-Jack cheese 1 slice/burger 1 slice/burger
Sesame hamburger buns 8 8
Avocado, sliced 16 slices 16 slices
Tomato, Sliced 8 slices 8 slices
For Sauce:
Saucemaker Pepita Mole Sauce 4 Tbsp 60 ml
Mayonnaise 4 Tbsp 60 ml


  1. Combine Ground beef, black peppercorns, olive oil, garlic, Saucemaker Peppercorn Brandy Sauce, shallots, rosemary and salt together in a large bowl.
  2. Tightly compress into 8 patties and chill in refrigerator for 2 hours
  3. Grill patties to an internal temperature of 160F (71C), or until well-done and no longer pink inside.
  4. Top each patty with 1 slice of Spicy Pepper-Jack cheese until slightly melted.
  5. Garnish with slices of avocado, tomato
  6. Top with Saucemaker Pepita Mole mayonnaise mixture
  7. Serve on toasted buns

TIP: To add zest to this burger, replace avocado slices with spicy guacamole dip
