Huevos Rancheros

YIELD: 4 portions

Ingredients: Imperial Metric
Small tortillas 8 8
Vegetable oil 2 Tbsp 30 mL
Black Beans, rinsed and drained 1 cups 375 mL
Fresh cilantro, chopped cup 125 mL
Eggs 8 8
Avocado, sliced 8 8
Sour cream 4 Tbsp 60 mL
Fresh salsa 4 Tbsp 60 mL
Saucemaker Pepita Mole Sauce 1 cup 250 mL


  1. Fry the corn tortillas in hot oil until crispy. Drain on paper towels.
  2. Place black beans with Saucemaker Pepita Mole Sauce in saucepan and warm gently.
  3. Fry eggs over easy in another saucepan.

To Assemble

  1. Plate corn tortilla on the plate, top with black bean sauce, place eggs over beans.
  2. Garnish with avocado, sour cream, salsa and cilantro. Serve at once.
