New World Roulade Pork Loin rolled with Fresh Sage


YIELD: 20 Portions. 1 Whole pork tenderloin = approx. 3 servings


Ingredients: Imperial Metric
Whole pork tenderloins 7 7
Fresh oregano leaves 10-15 per roll 10-15 per roll
Saucemaker Baja Chipotle Sauce 3 1/2 cups 875 mL
Red Wine 3/4 cup 175 mL
Rub:
Ancho chili powder 1 3/4 cup 425 mL
Olive oil 1 3/4 cup 425 mL
Paprika 1 3/4 cup 425 mL
Garlic cloves, minced 2 1/3 Tbsp 35 mL
Baby root vegetables

Method:

  1. In the centre of the pork tenderloin, place a layer of oregano leaves. Roll tenderloin up.
  2. Combine all rub seasonings together and rub mixture over rolled tenderloin.
  3. In a sauté pan, heat oil until very hot. Sear pork tenderloin on all sides and cook about 3 minutes per side.
  4. Remove from pan and slice on diagonal. Tent with foil.
  5. Add Saucemaker Baja Chipotle Sauce and 2 Tbsp red wine to pan until glaze forms.
  6. Place sliced pork tenderloin in centre of plate and drizzle with glaze.
  7. Roast a medley of baby root vegetables. See Dips & Sides for this great recipe!
  8. Place vegetables around slices of pork and garnish with fresh sage.

TIP: For a great side to this dish, refry Lepuy lentils and serve with ruby red grapefruit. Garnish with fresh oregano.
