Pepita Molé Fajitas

YIELD: 4-6 Portions

Ingredients: Imperial Metric
Flank steak 1 lb 454 grams
Onions, sliced 2 large 2 large
Red bell peppers, sliced into wedges 2 large 2 large
Saucemaker Mexican Pepita Molé Sauce 1 cup 250 mL
Lime juice 3 Tbsp 45 mL
Flour tortillas 12 12
Sour Cream and guacamole (as sides)


  1. Score the flank steak on the surface of one side to prevent curling. In a large baking sheet combine Saucemaker Mexican Pepita Molé Sauce with lime juice.
  2. Add the steak and coat with marinade on both sides. Cover and marinate for at least 30 minutes.
  3. Preheat the grill until very hot. Cook steak on the grill for 3-4 minutes per side for rare. The vegetables can also be grilled or sautéed in a skillet. Remove steak from the grill and slice into very thin slices against the grain.
  4. Wrap the tortillas in a damp towel and aluminums foil and warm on very low heat, until ready to use.
  5. In each tortilla place 3 overlapping slices of meat and top with peppers and onions, drizzle on 2 tablespoons of Saucemaker Mexican Pepita Molé Sauce. Serve with sour cream and guacamole.

TIP: Fajitas and the Saucemaker MexicanPepita Molé Sauce work equally well using either chicken or shrimp.
