South Western Rubbed Cornish Hens

Ingredients: Imperial Metric
Cornish hens 24 24
Saucemaker Baja Chipotle Sauce 4 cups 1 L
Goat cheese, crumbled 2 lbs 1 kg
Blue cheese, crumbled 1 lb 480 g
Green onion, chopped 1 1/4 cups 300 mL
Garlic cloves, minced 24 24
Saucemaker Zesty Orange Ginger Sauce 4 cups 1 litre
Worcestershire sauce 1/2 cup 125 mL
Shiitake mushrooms
Pineapple chunks
Green onions


  1. Marinate cornish hens in Saucemaker Baja Chipotle Sauce for 2-24 hours
  2. Preheat oven to 400F (200C).
  3. Mix cheeses together with onion, garlic and Worcestershire Sauce. Form into balls and fill each Cornish hen cavity.
  4. Roast in oven for 45 min - 1 hour, until brown.
  5. Skewer a combination of shiitake mushrooms, pineapple, green onions and tomato.
  6. On lightly greased grill, cook skewers for a few minutes per side.
  7. Heat Saucemaker Zesty Orange Ginger Sauce and drizzle over Cornish hens. Serve with grilled skewers.
