Sweet Potato Madras Frites

YIELD: 4 Portions

Ingredients: Imperial Metric
Large sweet potatoes, scrubbed, unpeeled 4 4
Saucemaker Madras Sauce 1/2 cup 125 mL
Grape seed or canola oil 1 cup 1 cup
Green onions, thinly sliced 1 Bunch 1 Bunch
Sea salt & Freshly ground pepper to taste to taste


  1. Preheat oven to 400 Degrees. Wash and dry potatoes thoroughly.
  2. Cut potatoes into long 3/8 cup thick matchsticks.
  3. In a large bowl combine oil ands Saucemaker Madras Sauce. Add the potatoes and season with salt and pepper.
  4. Place a heavy sheet pan in oven. When pan is hot, remove from the oven and arrange fries evenly on it.
  5. Bake for 12 - 16 minutes until slightly brown and tender. Remove and sprinkle with salt and green onions. Serve as a side to a grilled vegetable naan sandwich.

TIP: These fries can also be cooked in a deep fryer. dry the fries, cut fries and serve with Madras Mayonnaise. To make mayonnaise stir part Saucemaker Madras Sauce into 2 parts mayonnaise, keep refrigerated until using.
