Asian Lettuce Wraps


Get wrapped up in this unique and delicious taste! Juicy ground pork is seasoned with authentic Shanghai Sauce – with exotic flavours of orange peel, red peppers and garlic -- then sautéed with chestnuts, bamboo shoots, mushrooms and fresh Thai basil and enfolded in chilled lettuce leaves. Served with more Shanghai Sauce for dipping, these wraps are leafy and luscious.


YIELD: 1 Portion


Ingredients: Imperial Metric
Sesame oil 1 Tbsp 15 mL
Boston bibb Lettuce 1 head 1 head
Bamboo shoots, shredded ½ cup 125 mL
Water chestnuts, sliced 16 pieces 16 pieces
Black mushrooms, chopped 8 pieces 8 peices
Coarsely ground pork ¾ lb 375g
Ginger, minced 2 tsp 5 mL
Garlic, minced 2 tsp 5 mL
Soy Sauce 1 Tbsp 15 mL
Saucemaker Shanghai Sauce ¼ cup 60 mL
Thai basil, shredded 2 Tbsp 30 mL
Green onion, chopped 2 Tbsp 30 mL
Cornstarch 1 Tbsp 15 mL

Method:

  1. Peel away outside of lettuce and discard; Split the head in half with a knife. Peel away outsides leaves and place on serving plate.
  2. Combine water chestnuts, bamboo shoots and mushrooms. Then add ginger and garlic.
  3. Combine pork with Saucemaker Shanghai Sauce and Soy Sauce mixed with cornstarch.
  4. Heat oil in skillet; add pork mixture, stirring and separating the bits of pork.
  5. Once pork is cooked, add the mushroom mixture and sauté, stirring for about 2 minutes.
  6. Add fresh basil and green onion to mixture; stir to distribute.
  7. Place mixture into chilled lettuce and wrap. Tie bundles with presoaked chives.
  8. Serve with a ramekin of Saucemaker Shanghai sauce for dipping.

TIP: Lettuce wraps can also be served with the ingredients separated on an Asian platter. Each guest can make the wraps their own special way. Try adding vermicelli and fresh lime to the ingredient list when serving in this unique way.
