Fiery Red Thai Meatloaf

Red Thai Sauce, replete with Asian herbs, spices and coconut milk, provides a spicy variation on this familiar meatloaf favourite. Of course there's also fresh garlic, basil, onion and spices mixed into the ground beef. As a finishing touch, drizzle Red Thai Sauce for an added "lick of fire". After tasting this mouth-watering entrée you'll never look at meatloaf same way again.

YIELD: 20 Portions (2 portions per loaf)

Ingredients: Imperial Metric
Olive oil 2/3 cup 150 mL
Cloves of garlic, chopped 20 20
Eggs 10 10
Saucemaker Red Thai Sauce 7 1/2 cups 1.75 Litres
Soft bread Crumbs 10 cups 2.5 Litres
Lean ground beef 20lbs 9kg
Parsley or fresh basil, minced 2 cups 500mL
Spanish onion, chopped 2 ½ cups 600mL
Salt and pepper to taste to taste


  1. Heat oil in skillet, cook onion and garlic until soft.
  2. In a large mixing bowl, combine the rest of ingredients.
  3. Spoon mixture into a 2 litre loaf pan.
  4. Bake uncovered with foil for 1 hour at 350°F (180°C).
  5. Uncover and bake for 20 minutes.
  6. Pour off any liquid that has accumulated.
  7. Turn over, slice and serve.

TIP: Before serving, drizzle warmed Saucemaker Red Thai Sauce over sliced loaf. For an unforgettable presentation, create a small potatoe basket by deep frying grated potatoes and garnish with fresh chives, baby corn and root carrots.
