Mediterranean Grilled Chicken Pita


This mouth-watering Grilled Mediterranean Pita, with succulent chicken strips, field-fresh tomatoes, red onion and crisp cucumbers are wrapped in a lightly grilled pita. Topped with the light garlic sensation of Yogurt Sweet Basil & Garlic Sauce for truly delectable Mediterranean fare.


YIELD: 12 Wraps


Ingredients: Imperial Metric
Chicken breast, boneless, skinless 12 12
Balsamic vinegar cup 175 mL
Olive oil cup 125 mL
Oregano leaves, Chopped 3 3
Roma tomatoes, diced 5 5
English cucumbers, diced 2 2
Small purple onion, diced 1 1
Mint leaves, chopped 5 5
Zucchini, sliced, Grilled 4 4
Greek style pitas 12 12
Saucemaker Yogurt Sweet Basil & Garlic Sauce 2 cups 500 mL
Greek Cole Slaw:
Heads of cabbage, shredded 2 2
Medium purple onions, thinly sliced 2 2
Carrots, shredded 2 2
Zuchinni, shredded 1 1
Crumbled feta 2 cups 500 mL
Pitted kalamata olives, rough chop 1 cup 250 mL
Olive oil 1 cup 250 mL
Red wine vinegar 1/2 cup 125 mL
Garlic cloves, crushed 4 4
Dried or fresh oregano 2 tsp 10 mL

Method:

  1. In large, non-aluminium bowl, whisk together balsamic vinegar, olive oil and oregano. Add chicken, turning to coat. Chill up to one hour.
  2. Remove chicken from marinade and grill each breast until interior temperature is 165F or the juices run clear and the meat is no longer pink. Cool and cut each breast into thin strips.
  3. In medium bowl, combine tomatoes, cucumbers, purple onion, fresh oregano and mint. Set aside.
  4. Brush pita on both sides with olive oil. Grill on one side, turning after grill marks appear and pita is warmed, repeat for second side.
  5. Assemble each wrap starting with the warmed pita: 45ml/3 Tbsp Yogurt Sweet Basil & Garlic Sauce; thinly sliced chicken breast; 125ml/1/4 cup tomato, cucumber mixture, top with grilled zucchini slices and spread 45ml/3 Tbsp Yogurt Sweet Basil & Garlic Sauc

Greek Cole Slaw:

  1. Shred all vegetables into a large bowl. Mix in feta cheese and olives. In a small bowl, combine the olive oil, vinegar, garlic, oregano and salt and pepper to taste. Mix all together and chill till needed.

TIP: Serve with a side of Greek Cole Slaw or put the slaw into the wrap instead of the tomato cucumber mixture.
