Sweet and Sour Roasted Vegetable Panini

This inviting vegetarian dish features roasted red peppers, onions and sweet potatoes mingles with a tangy tropical treat -- chunky Pineapple Curry Sauce paired with Sweet and Sour Sauce. The savoury veggies are served in a grilled Panini with Mozzarella and fresh coriander and complemented with a warm pineapple dipping sauce. Creative, colourful and so delicious.

YIELD: 2 Sandwiches

Ingredients: Imperial Metric
Greek style pita breads 2 2
Sweet potato, cooked cut into cubes 1 1
Roasted onion, cut up 1 1
Roasted red peppers, cut into small pieces 2 2
Saucemaker Sweet and Sour Sauce cup 125 mL
Saucemaker Pineapple Curry or Curry Sauce cup 125 mL
Havarti or Mozzarella cheese 2 slices 2 slices
Minced coriander, parsley or fresh chives 1 cup 250 mL
Olive oil 1 Tbsp 15 mL


  1. In mixing bowl add cooked and diced sweet potato, red pepper and onions. Add Saucemaker Sweet and Sour Sauce and Saucemaker Pineapple Curry Sauce and mix together.
  2. Take one pita and top with the mixture, add slice of cheese and then coriander.
  3. Brush outside of pita bread with olive oil and place in preheated panini press or sandwich grill. Grill for 3 to 4 minutes till brown on outside and cheese has melted inside.
  4. Serve dipping sauce of equal parts Saucemaker Sweet and Sour Sauce and Saucemaker Pineapple Curry Sauce alongside the panini sandwich.

TIP: This great recipe can be made ahead of time and stored in the refrigerator.
