Warm Chicken Salad with Cranberry Orange Sesame Dressing


YIELD: 4 Portions


Ingredients: Imperial Metric
Mixed salad greens 6 cups 1.5 L
Broccoli flowerets 1/2 cup 125 mL
Green onion, diced 1/2 cup 125 mL
Chicken breast, cut into strips 1/2 lb 240 g
Mandarin oranges 1/2 cup 125 mL
Olive oil 1 Tbsp 15 mL
Bean sprouts 1 cup 1 cup
Dressing:
Orange Juice 1/2 cup 125 mL
Saucemaker Cranberry Salsa 3/4 cup 175 mL
Sesame oil 2 tsp 10 mL

Method:

  1. Combine dressing and set aside. Divide greens among 4 individual plates.
  2. In a skillet, heat olive oil and add chicken strips, cook till browned, dd broccoli flowerets and green onion, heat through.
  3. Whisk dressing and add to pan to heat for 30 seconds. Spoon over each salad plate and top with mandarin oranges and bean sprouts.

TIP: For a summer version of this salad, grill chicken and toss other ingredients together with dressing, serve with chicken and a sprinkling of slivered almonds.
